      Each tea ceremony has its theme such as season, particular person or event. Based on that, the master of the ceremony decides sweets served with matcha, tea bowls and hanging scroll. One time the theme was spring.   sweets: Sweets chef drawed cherry blossoms. They are representative as spring flower. hanging scroll is written as “春水満四澤”   It means that all the rivers in the mountain are filled with snow melting water. Spring as the theme of tea ceremony


Green Tea and Wagashi Delights in Tokyo Cherry trees are getting ready to bloom very soon. In a couple of weeks, we’ll be enjoying the flowers along the park that leads us to our tea instructor’s house in Toritsudaigaku. We had a mother and two daughters at our casual tea ceremony workshop today. They are from Salt Lake City, Utah (USA). The daughters tried sitting in the Japanese formal way, which even we Japanese have hard time doing. Green Tea and Wagashi Delights in Tokyo   It is still cold but there is a hint of spring in the air. We had two couples at our tea ceremony workshop yesterday at Toritsu-daigaku. One couple is from India and another from Italy. The tea bowls, utensils and the setup of the tea room had the theme of spring. Some of the tea bowls had motifs of the girls festival “hinamatsuri”.       They are “cherry blossom” and bird themed Jo-namagashi. Jo-namagashi refers to the highest quality Japanese sweets used in tea ceremonies. Guests can participate in the step-by-step process of preparing the sweets (from kneading the dough, coloring, forming the shape and designing sweets). Spring recipes have arrived for the wagashi making class!



Enjoy Wagashi Making with Uji Matcha Tea in Tokyo   We welcomed a siblings group from Australia yesterday at our “Wagashi making with Uji matcha tea” workshop. They made jokes on each other but they get along so well. Such a wonderful team! We ended up with lots of laughs and sticky doughs on their hands! They seem to have enjoyed making wagashi especially the peony bud on which they sprinkled dry mochi powder mimicking snow.
